The Tabi varietal — whose name means “good” in the indigenous Guambiano language — was developed in Colombia to blend the best of three worlds: the elegance of Typica, the body of Bourbon, and the resilience of Timor Hybrid. At Tío Conejo Café, we cultivate Tabi with deep respect for its heritage, using the natural process to highlight its fruit-forward, expressive nature.

The cherries are handpicked at peak ripeness and carefully dried under the Andean sun, a slow process that allows the natural sugars of the fruit to enhance the bean’s complexity. Grown in volcanic soil at high altitude near Manizales, every cup of Tabi Natural reflects the perfect union of science, tradition, and artistry.
